They say the best thing about Thanksgiving leftovers is that they’re even better the next day. Never has that sentiment been so true, than with these Thanksgiving leftover pizzas!
We’ve been there, done that, eaten it and cooked it. Post-Thanksgiving always included a lunch of leftover turkey-something. This year, we’re committed to making something different that didn’t involve the turkey to be sandwiched in between something or simmered in broth.

Leftover Pizza

Ingredients

  • 1 12” Home Run Inn Frozen Cheese Pizza
  • 1 teaspoon extra-virgin olive oil
  • 1/2 teaspoon sugar
  • 3/4 cup mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1 cup prepared stuffing
  • 1 roasted turkey or chicken thigh, with skin
  • 1/4 cup chunky cranberry sauce
  • 1/4 cup gravy
  • 1 teaspoon dried sage
  • 1 tablespoon fresh parsley, chopped

 Directions:

  • Put a pizza stone or upside-down baking sheet in the oven; preheat to 450 degrees F. Brush a 12” HRI frozen pizza with the olive oil and sprinkle with the sugar. Slide onto the hot pizza stone or baking sheet and bake until golden on the bottom, 5 to 7 minutes.
  • Meanwhile, mix the mashed potatoes with 1/4 cup cheese and the milk in a bowl; set aside. Roll tablespoonfuls of the stuffing into 1-inch balls to look like meatballs. Shred the turkey meat and julienne the skin. 
  • Spread the cheddar mashed potatoes over the pizza, then top with the shredded turkey. Spoon the cranberry sauce over the pizza and drizzle with the gravy. Arrange the stuffing balls on top and sprinkle with the remaining 1/4 cup cheese and the turkey skin.
  • Return the pizza to the oven and bake until golden brown, 8 to 10 more minutes. Garnish with dried sage and fresh parsley.

HRI Pizza

We’ve broken all tradition and are making BBQ turkey pizza. Why not? Everyone loves a BBQ chicken pizza, so it seems prefect to do one with turkey.

BBQ Turkey Pizza

Ingredients:

  • 1 cup BBQ sauce, or amount to preference
  • 1 cup cooked turkey pieces
  • 1 cup grated smoked Gouda cheese (or other preferred cheese)
  • Kosher or sea salt, to taste
  • Fresh cracked black pepper, to taste
  • 1 12” Home Run Inn Frozen Pizza
  • 1 tablespoon of fresh parsley, chopped

Directions:

  • When you are ready to make pizzas, preheat the oven to 550°F with a baking stone on the middle rack for at least 30 minutes.
  • Gently ladle and spread the sauce on the pie. Spread the turkey on the pizza, spread the cheese, and season with additional salt and pepper if desired.
  • Bake for 10-13 minutes or until the crust is golden or even slightly charred if you like.
  • Allow pizza to cool for a few minutes, then slice and serve.
